
The Role of Technological vs. Sensory Data During the Roasting Process
One of the largest challenges any roasting company faces is consistency in roasting. Our roasting process is, at its foundation, a dichotomy of cutting-edge technology and basic sensory skills, using everything in our arsenal in order to achieve a consistent bean.
To achieve this consistency, we utilize advanced profiling software like RoastPath to meticulously monitor temperature curves, airflow, and development time. These factors are crucial in maintaining precision across every batch. However, technology is only part of the equation- we also rely on our senses, including sight, smell, and sound, to ensure uniformity and catch any outliers that might arise from environmental factors or unreliable probe readings. A good roaster needs to develop their senses in order to keep a roast on track if the technology were to go offline, or the probes were to behave erratically.Â
Even slight changes in humidity, room temperature, or airflow within our roasting facility can impact how heat transfers to the beans. To counteract these variables, we make real-time adjustments, fine-tuning each roast to maintain the integrity of our flavor profiles. This level of precision allows us to bring out the unique characteristics of every origin and blend we offer with a finer precision than automated processes.
The intersection of sensory data and technology is the roast profile. We carefully track color development, first crack timing, and the rate of rise, cross-referencing digital readings with sensory cues like aroma changes and bean expansion. Although it is normal to rely on the precise readings from RoastPath, at times, a roaster has to also take in the sensory data in order to determine if the probes are accurately reflecting the state of the beans. Big decisions almost always boil down to the appearance, smell, and sound of the bean rather than the probe readings. This cross between technology and craftsmanship ensures that no detail is overlooked, allowing us to consistently replicate a balanced, flavorful roast every time.
